Delicious Vegan "Cream Cheese" Spread

We all know how hard it is to completely come off junk food when we are making the transition to more healthier food options. For many of us, processed foods were always part of the daily food regime. They provided our families with a simple alternative to preparing meals. Little did we know however, that these types of foods were taking their toll on our health. As we continuously awaken to this fact, we come to understand food more as a source that is whole, unadulterated, and completely void of processing or reconstitution. We rekindle the once lost desire for "healthy food" and redefine our perception of food as nature intended it to be.  It is both an enlightening an overwhelming experience to come to terms with this reality. As we make the step to eating  more whole foods, there are times where we "crave" certain "junk foods" that once inhabited our palate. In an effort to help with the transition, and to ease the cravings, it is our purpose to continue providing you with healthier food options. In this segment, we decided to share with you a great vegan alternative to herbed cream cheese spread. We hope you enjoy it!

Herbed Cream Cheese Spread

Advanced Prep: 1/2 an hour for cooling in refrigerator

Immediate Prep: 25 mins.

Yields: 2-3 cups

Equipment Needed: Blender

Ingredients:

1 1/3 cups macadamia or pine nuts (unsoaked)
1/3 cup of water (spring or distilled)
1/4 cup of olive oil
3 tablespoons of lemon juice
1-2 tsp of salt (or desired taste)
1 tsp or ground peppercorn
2 tbsp of freshly minced dill
1 tbsp of freshly minced sage


Directions:

Combine the nuts, water, olive oil, lemon juice, and salt into the blender and mix until smooth.
Transfer the mixture to a bowl. Hand mix the remaining ingredients. Cool in the refrigerator for 1/2 hour before serving.

That's it! It's really is that simple!

Grateful for What We Have

When we awoke this morning we gave thanks to the fact that we are very fortunate for the life that we live and the people that surround us (as we usually do everyday). By putting ourselves in this reality, we can align with loving, positive thoughts, although we can't help but think of all those unfortunate people who are suffering from the many hardships and strain the current global system is putting on them. It's true, we are all here for a specific purpose and have certain things that we must learn, however, this does not discount the fact that we should show a little compassion for our fellow being. We are so fortunate to live in an area of the world that provides great opportunities to exercise our creativity and have access to an abundance of almost anything. We are also blessed by the fact that love surrounds us and our decisions daily. We are true believers in many of our physical laws, including: what you put out is what you get back. We believe that a continual positive mindset will bring many good things to our life, so we try practice this daily.

Aligning with the Positives


It seems to be a challenge for many people to stay positive these days, let alone get up refreshed and thankful every morning. It's true that many of us struggle to make ends meet, and that things hardly ever turn out the way we want them, however, I must tell you that all these negative things can turn around for the better in a heartbeat. You see, the universe is governed by a series of laws which dictate our existence and boundaries on many of the various dimensional realities that exist, including our 3rd dimensional existence here on earth. Essentially, bound to these laws, we receive an exchange of information for our thoughts, choices, and actions. In other words, what we choose to do or think has a reciprocal effect. For example, if we decide to complain all day long, we will be trapped in a reality that is both miserable and negative. On the other hand, if we choose to be thankful to experience another day on this earth and harness that thought in our minds all day, we will receive exactly what we have thought or took action to. For what we think and/or do affects our reality. It is really that simple! Choose to be positive, and you shall receive positive; choose to be negative, and you shall receive negative. Our realities are based on the thoughts and choices we make. Therefore, our lives are a reflection of what we think or do. Any "successful" person will tell you that you have to stay positive and work hard, for nothing comes easy and reward comes to those who make an effort.

Stay Focused

For some, choosing to be positive can be a challenge, especially if they have lived a life surrounded by negativity. It's true, our environment has some role, however, it is within ourselves that we shall find peace, and not the objective world. We must always look to our inner voice for direction and reason. If anything, stay focused on your purpose, never let go of that happy thought and be grateful that your alive. We send you all love and positivity today and everyday to rise above and choose the reality in which you want to live. Be kind to yourself and compassionate to others, with this, you shall overcome the difficulty you perceive in your life.

The Health Benefits of Apple Cider Vinegar

Most of you have probably heard about Apple Cider Vinegar (ACV), however, did you know that it has been used for many hundreds, if not thousands of years. In fact, Hippocrates ( the father of medicine) used AVC back in around 400 B.C. for its health giving qualities. Even today, many use it as a common household remedy. More and more people are becoming attuned to its amazing health benefits. AVC is something that Kyla and I highly recommend taking often, as it is not only a great remedy, but it is also a superb preventative.

What Type is Best?

When purchasing ACV, always ensure that the product has sediment floating around in it; this ensures that it has not been distilled or treated, which, by this process, removes many of the beneficial nutrients form it - don't be fooled by the clear imitation; they have little to know benefit for you. If you can find an organic product, even better! This ensures quality, without the added chemicals or preservatives. Kyla and I recommend Bragg; they offer a great product which is available organically and also available in glass for those of you that are concerned about estrogen mimickers in plastics. If you can't locate this product, there are several other comparable products being sold at your local health food store.

Some of the Benefits

  • Prevents bladder stones and urinary tract infections
  • Strengthen the immune system
  • Increase stamina
  • Alleviate symptoms of arthritis and gout
  • Reduce sinus infections and sore throats
  • Balance high cholesterol
  • Cure skin conditions such as acne
  • Protect against food poisoning
  • Increase metabolism which promotes weight loss
  • Improve digestion and cure constipation
  • Prevent muscle fatigue after exercise
  • Fight allergies in both humans and animals

If your suffering from "heartburn" you may add a few teaspoons to a glass of water to alleviate the symptoms. This is a much better alternative to some of the over-the-counter medication on the market today.

Some of Its Uses

Bad Breath: Due to its acidic properties, Apple Cider Vinegar makes a wonderful remedy for bad breath (halitosis). Simply add 1/2 tablespoon of ACV into a cup of water and gargle the mixture in your mouth for 10 seconds at a time until the cup is empty.

Body Odour: Apple Cider Vinegar is an effective body odour remedy, since it can help adjust the skin's pH level which helps to eliminate odor-causing bacteria. For armpit odour, simply wipe them once each morning with undiluted apple cider vinegar (using a cotton ball). For foot odour, fill a pan with warm water and add 1/3 cup of ACV, then let your feet soak in this mixture for 15 minutes once per week.

Diabetes: Apple Cider Vinegar may help to control high blood sugar levels, which is why it is often used as a natural treatment for Diabetes.

Weight Loss: While it is not known why, many people claim that Apple Cider Vinegar promotes weight loss. Some theories suggest that ACV helps to speed up the metabolism, while others suggest that it burns calories. A number of nutritionists also believe that combining Vitamin B6 and Lecithin with Apple Cider Vinegar is highly effective for weight loss. A suggested remedy is to mix 2 teaspoons of ACV mixed with a glass of water and drink this before every meal or sip it slowly throughout the day.

These are just a few of the many benefits of Apple Cider Vinegar (ACV); When dealing with an illness, always ensure to consult a trained professional if your uncertain, otherwise, look to Mother Nature for the answers. Chances are, she already has the remedy.

So many of these products sold on the market today are riddled with toxic chemicals and additives including, parabens, triclosan, sodium laurel sulphate, aluminum, fluoride, and the list goes on. If you're at all concerned about these products that contain potentially deadly ingredients such as those just mentioned, we encourage you to read the labels before you buy.  A great resource that we have used in the past is Skin Deep Cosmetic Database where you can search products that will provide you with a breakdown of what is in them, identifying those ingredients that are harmful, and providing you with better alternatives. If you want to take it a step further, you may also try making your own.

How to Make Raw Cauliflower "Popcorn"

Popcorn has been an important staple for many cultures. In particular it has been historically used by the Aztecs not only as an important food, but  it was  also used as decoration for ceremonial headdresses, necklaces and ornaments on statues of their gods, including Tlaloc, the god of rain and fertility. Today we celebrate this magnificent food; however, we offer you an alternative to those who are intolerant to the seed. We have concocted a raw alternative to popcorn using cauliflower. This alternative also proves to be extremely healthy for you, so don't be shy, feel free to dig in. We hope you enjoy this tasty treat as much as we do!

Raw Cauliflower "Popcorn"

Ingredients:
  •  1/2 -1 whole head of organic/local cauliflower 
  • 4 tbsp of olive oil ( or desired taste)
  • 2-3 pinches of Celtic Sea Salt or Himalayan Salt (Kelp granules are also a great alternative to salt)
  • 1/2-1tsp of chili powder (or desired taste)
  • 4-5 tbsp of *nutritional yeast  to give it a "cheezy" flavour (

Directions:

Cut up the cauliflower into bit-sized pieces and then add the ingredients. That's it! Enjoy the goodness it has to offer!

*Important Note: Nutritional yeast DOES NOT contain active yeast.  It is generally considered acceptable in moderate amounts for those following a diet designed to manage Candida albicans. Also, remember that there is a significant difference between brewer’s yeast and nutritional yeast.

Nutritional yeast is a tasty product you can find in natural foods markets. These yellow flakes are a pure strain of yeast called Saccharomyces cerevisiae. In the same family as edible mushrooms, yeast has been used in food and beverage production for more than 5,000 years. Today, the same strain is used to brew beer, make wine, and leaven breads as well as develop the nutritionally-rich food called nutritional yeast.

Delicious Raw Chocolate Pudding

Many of you have been asking us to put together some recipes. Well, we have dug one of our previously shared recipes out for you. As we know most of you like chocolate, we have decided to share a raw chocolate pudding we have concocted for you over the summer months last year. We must warn you however that it is extremely addictive, so go heavy on it - it's naturally raw after all. Let every bit warm your soul. Let us be thankful for such great food we have at our fingertips; we are truly thankful for the food, but also to be surrounded with so many loyal friends and like minded individuals! How to Make Your Very Own Chocolate Pudding

Raw Chocolate Pudding

Ingredients:

2-3 Tbsp Coconut Oil
A Pinch of Celtic Sea Salt or Himalayan Rock Salt (to enhance the sweetness)
2 Medium Sized Bananas
1 Avocado
1 Tsp of Raw Mesquite Powder (Optional)
1 Tsp of Raw Cacao Powder

Directions:
    Insert all ingredients into the Blender ( Preferably a Vitmaix or Blendtec)  and blend thoroughly (for about 1 minute) and serve.

    Makes about 2 servings ( 500ml)

    *Add water if you prefer to think the pudding out a bit.
    **Don't forget to add a sprinkle of love to give it that extra kick!

    Our Favourite Vegan Chili Recipe

    Given that we are now well into the winter months here in Canada, it is essential for most of us to have something warm and heavy to eat. Kyla and I enjoy eating these types of foods during the winter months as they provide us with the necessary macro-nutrients to keep us energized and warm. We have decided to share our favorite vegan chili recipe with you in hopes that it warms your heart and soul too. We also like to take this opportunity to say thank you to all our readers.     Vegan Chili

    Ingredients:

    1 cup of dried shiitake mushrooms
    2 1/2 cups of warm water (preferably spring water)
    2 tablespoons of olive oil
    1 large onion, finely chopped
    3 large carrots, quartered lengthwise and thinly sliced crosswise
    3 cloves of garlic, slivered
    1 tablespoon of minced fresh ginger
    3 cups of cooked kidney beans (or preferred bean - try to avoid canned if possible)
    1 1/4 pounds of butternut or kabocha squash, peeled and cut into 1 inch chunks ( 4 1/2 cups)
    6 medium field tomatoes diced
    2 teaspoons of chili powder
    1 teaspoon of Celtic/Himalayan salt for flavour (optional)


    Directions:

    1. Heat the water on medium heat until water is warm.
    2. Once warm, place the water in a medium bowl and soak the dry shiitake mushrooms for 30 minutes (or until the mushrooms are re-hydrated and tender).
    3. Using your fingers, pull the mushrooms from the liquid. Set the liquid aside.
    4. Discard the stems and finely chop the mushrooms.
    5. In a large pot or saucepan, heat the olive oil over medium heat.
    6. Add the onion, carrots, garlic and ginger, and cook, stirring frequently, until the onion is tender -about 12minutes.
    7. Finally, add the mushrooms and their liquid, the beans, squash, tomatoes, chili powder, and salt and bring to boil.
    8. Reduce to simmer, cover, and cook until the squash is tender (about 30 minutes).

    Yields about 8 servings.

    I hope you enjoy this recipe as much as we do! Delicious!

    **If you plan on using dried beans, make sure to soak them overnight, rinse and cook on medium for at least 1 1/2 hours. 1 1/2 cups of dried makes about 3 cups of cooked.**
