Simple Vegetable Stir Fry

In keeping with our healthy food options, we decided to share with you a very simple, and extremely nutritious dish that is sure to please your taste buds. Do you often find yourself looking into the fridge not sure what to do with all those extra vegetables that are about to spoil? Are you frustrated at the potential waste this may cause? Why not get some good friends and family together for a weekend stir fry and enjoy the flavours nature has to offer! This simple Stir Fry that Kyla and I often prepare is not only fun, but it taste great! If you are pressed for time, this is the perfect dish for you. So go ahead, and give this recipe a whirl.

Simple Vegetable Stir Fry


2 cups (500 mL) organic broccoli tops
2 cups (500 mL) organic carrots sliced diagonally
1 cup (250ml) of organic cauliflower tops
1 organic onion, thinly sliced lengthwise
3-in (7.5-cm) piece of organic ginger root, grated or finely sliced
6 cloves of organic garlic garlic, minced finely
1 cup (250 mL) organic shiitake mushrooms, thickly sliced
1/2 cup (125 mL) organic orange peppers, sliced lengthwise
1/2 cup (125 mL) organic red peppers, sliced lengthwise
1/2 cup (125 mL) organic yellow peppers, sliced lengthwise
4 Tbsp (60 mL) coconut oil
1/2 tsp (2.5ml) of turmeric
Tamari (natural soy) sauce to taste
A pinch of Himalayan salt or Celtic sea salt to taste
1/4 cup (75ml) of almond slivers or sesame seeds to garnish


1. Heat oil  in a large cast iron skillet over medium-high heat. 
2. Add onions, ginger, and garlic and stir quickly with a wooden spoon until onions are golden brown.
3. Add broccoli, carrots, and tamari (to taste). Stir quickly until tender but still firm and brightly coloured. Remove from heat, but do not cover.
4. In a separate cast iron skillet, heat a small amount of oil over medium high heat.
5. Add mushrooms and sauté until brown and tender.
6. Add green and red peppers and stir quickly for about 3 minutes.
7. Add tamari, salt and turmeric
8. Add mushrooms and peppers to broccoli mixture.
9. Toss together quickly and serve immediately.Top with almonds and or sesame seeds 

*Serve over a bed of brown basmati or wild rice (optional)

Serves 4.

You can't get any easier than that! Not only does it take little  time to prepare, it is excellent for you! This dish will continue to please even for days after! It makes for the perfect leftover for lunch. You may add whatever vegetables you wish. The idea here is to make it enjoyable based on your tastes. The most important thing here is to have fun!
