Delicious 'Raw Vegan' Carrot Zucchini Salad

Ingredients:

3 carrots (organic if possible), coarsely grated
1 zucchini (organic is possible) coarsely grated
4 tablespoons raisins
3 tablespoons raw sunflower seeds
Juice of 1/2 lemon
1 tablespoon olive oil
Salt and pepper, to taste
A pinch nutmeg (optional)
A pinch cinnamon


Directions:

1. Combine the grated carrots and zucchini with all other ingredients in a large bowl.
2. Mix well.

Now its ready to serve or pack-up for lunch!

Serves 2 -4.
