Simple Sweet Potato and Cucumber Dip

The sweet potato has become a favorite of ours lately. It's creamy texture and sweet taste has left our appetite screaming for more. Such a versatile vegetable this is! Unlike many processed, ready-to-eat dips you may find lined in the "snack" section of a grocery store which are loaded with food additives and trans fats, this dip is not only void of these life-shortening substances, but it is loaded with many life promoting macro and micro nutrients. In our previous recipes, Kyla and I have showed you how to make a sweet potato salad and a slow roasted parsnip and sweet potato dish. If you enjoyed these recipes, your sure to enjoy this one. Sweet Potato and Cucumber Dip

Ingredients:

2 small or 1 large organic sweet potato 
1 tsp (5 ml) sweet (or hot) non-irradiated, organic paprika
Juice and zest of 2 organic limes (lemon may also be used)
Sea salt and pepper to taste
1 cup (250 ml) English cucumber, diced
A pinch of non-irradiated, organic cayenne pepper

Tools:

Baking Sheet
Food Processor
Knife
Cutting board

Directions:

1. Preheat oven to 400 F (200 C). Bake sweet potatoes on baking sheet until easily pierced with a knife, about 1 to 1 1/2 hours.
2. Let cool enough to handle. Slice open and scoop flesh into food processor. Add paprika, lime juice, and zest. Purée mixture; season to taste.
3. Place dip in bowl; add cucumber and mix well.
4. Top with cayenne pepper

Serves 6.
