Swiss Chard Wraps with Turmeric Sauce

Many of you have read the health benefits of both turmeric and green leafy vegetables in some of our previous posts. We feel that these foods are extremely beneficial to one's health, and as such, we have decided to combine these two powerhouses in to a recipe you are bound to enjoy. Are you tired of the traditional wheat based wraps which only leave you tired and feeling sick? Then why not feast your mouth into these delicious raw vegan wraps. Not only will they make you feel amazing, but they taste incredibly good too. The most important thing however, is to have fun! Enjoy!

Turmeric Sauce

1 organic young Thai coconut, flesh from (approximately 1 cup, packed)
1/3 cup fresh coconut water (from organic young Thai coconut)
1 clove of organic garlic
1/2 teaspoon fresh chopped organic ginger
1/2 organic lime, juice from
1 teaspoon turmeric
1/2 teaspoon coriander 
pinch Himalayan salt
pinch of pepper


Blend all ingredients in high-speed blender until smooth. Set aside to let flavors mix.

Wraps

4-8 organic collard green leaves
1 organic red bell pepper, cut into thin strips
1 carrot, cut into thin strips
1 cup cherry tomatoes, cut in half
1/2 cucumber, cut into thin strips
1 cup of organic or homemade alpha sprouts
1 organic avocado cut in thin strips


Directions

Place filling ingredients on collard leaf. Top with dressing. Roll and cut in half. Serve right away. Store leftovers in fridge for a maximum of 5 days.

Serves 4-6
