Gluten Free Almond Bread

When many people make the change to a "healthier" diet it is sometimes hard to part from some of the foods we have become so familiar with over our lifetime. Many of us in the western part of the world have grown up either consuming cereal or toast in the morning. Conversely, many of us have eaten sandwiches for lunch, or have had a piece of bread for dinner. If this has been the norm for you over the years, it is certainly understandable that it would be hard to completely rid bread (wheat based products) from meal time. Fortunately, there is a solution! Given the ever increasing intolerance to wheat worldwide, it has become more important to stay away from it. This does not mean you can't still enjoy some of your favorite foods, you just have to be a little more creative. As a result, we have provided you an alternative to wheat based bread. You won't believe its gluten free!

Gluten Free Almond Quick Bread 

Ingredients:

1 1/2 cups of almond flour
3/4 cups of arrowroot powder (starch)
1/4 cup of golden flax seed meal (you can grind regular flax seeds in a coffee grinder)
1/2 teaspoon of celtic sea salt (or Himalayan)
1/2 teaspoon of baking soda
1 tsp of liquid honey or maple syrup
1 tsp of apple cider vinegar
4 eggs (or 7 tbsp of almond milk or water for those who are vegan)

Directions:

1. In a medium bowl, combine almond flour, arrowroot, flax meal, salt and baking soda
2. In a larger bowl, blend eggs 3-5 minutes until frothy
3. Stir honey (or syrup) and vinegar into eggs
4. Mix dry ingredients into wet
5. Scoop (not pour) batter into a well greased 7.5" x 3.5" Loaf Pan
6. Bake at 350ยบ for 30-35 minutes, until a toothpick inserted into center of loaf comes out clean
7. Cool and serve

Makes 1 medium sized loaf

    Thanks for your kind words. Your assumption is correct. You may make the flour by grinding almonds (blanched almonds preferably) in a coffee grinder or similar device. ~ with love.
