Refreshing Strawberry and Spinach Salad

Salads can be a refreshing addition to any meal. With the endless amount of colors and configurations, salads present us with a multitude of healthy, wonderful options. Salads are a fun way to get greens into your diet on a daily basis, all the while allowing us to be creative. Why not give this simple, yet refreshing salad a try. The combination of strawberries and spinach are sure to give to most picky taste buds something to think about. Feel free to add your own dash of creativity to it; go ahead, make it your own! The most important thing is to have fun with it. We hope you enjoy it!

Refreshing Strawberry and Spinach Salad


3-4 cups of spinach
1/2 cup of strawberries, thinly sliced
1 avocado, cubed
1/4 cup of chopped walnuts (almonds or pistachios are good substitutions)
1/2 a purple onion, finely chopped (if your prefer, green onion can be used)
A pinch or two of poppy seeds (sprinkled)
1 tsp of fresh dill, finely chopped
2-3 tablespoons of olive oil
A drizzle of balsamic vinegar


1. Add all dry ingredients to a large bowl and lightly mix.

2. Add olive oil and balsamic vinegar and stir.

3. Sprinkle with poppy seeds

4. Adjust ingredients as desired. Enjoy!

Makes 2-4 servings.
